Located on Brunswick Quay, the popular food hall is now selling the very best meat from local, free range, British, native and rare breed livestock courtesy of Callum Edge and his team, with a fully staffed butchery department expected to open next month.
Edge & Sons, which was established in 1844 and has a small abattoir attached to its New Ferry premises, bring with them a wealth of experience spanning five generations and will serve up a wide range of cuts and products from locally reared and slaughtered beef, pork, lamb, mutton and poultry.
Proprietor of Delifonseca Candice Fonseca said: “It’s great to welcome Callum and the rest of the Edge & Sons’ team on-board as they are just as passionate about good produce and where it comes from as we are.
“They understand and share our ethos and it’s a real coup that all of their livestock is sourced within a 25 mile radius of where they are based, meaning their food miles are cut to a minimum. What I really loved about them is that they also have a personal relationship with each of their local farmers so they know where an animal has come from, all about the farm, the farmer, the feed, and they are able to ensure the welfare standards of their livestock.”
Edge & Sons butchers was named Best Retailer of the Year in the 2014 BBC Radio 4 Food and Farming Awards, being praised for the way that they ‘concerned themselves with every stage of the process’, and were awarded the RSPCA Independent Retailer Award in 2009 and 2012.
Crowned Best Independent Retailer in the Observer Food Monthly Awards 2014, Delifonseca Dockside has a reputation for its extensive food hall stocking a variety of offerings including cheese, charcuterie, quality groceries and fruit and vegetables alongside an in-house patisserie. The venue also stocks a wide selection of beers, wines and spirits.
