Carringtons Catering has provided a prestigious celebratory feast for the 2015 University of Liverpool Graduation Dinner.
 
Notably one of the city’s biggest events of the year, the Roby Mill based firm catered for an impressive 700 guests, who descended on St Georges Hall in celebration of this year’s honorary graduates and graduands. Attendees included the president of Ireland, the Left Lieutenant of Liverpool, together with regional and national stakeholders, higher education networks, strategic partners and alumni.
 
Throughout the evening, guests enjoyed a luxury three-course meal courtesy of Master Chef of Great Britain Darren Wynn and his team.
 
Director of Carringtons Catering Helen Wynn said: “We are delighted to have provided the catering services for the 2015 dinner, as not only is it the highlight of the university’s extensive events calendar, it’s also one of the  Liverpool’s most  prominent occasions of the year.
 
“The dinner welcomed a number of notable figures in the higher education sector – therefore it gives us great pleasure to have been a part of such a distinguished event and provide culinary excellence at its best. As always Darren and the team devised a menu that offers a range of fresh, seasonal and locally sourced dishes, with an emphasis on fine dining in terms of taste and presentation.”

 
The exclusive three course menu consisted of Tart of Lancashire Heritage Beetroot, Dolphinhome Goats Cheese, Tarleton Tomato Sorbet, Baby Basil followed by Bowland Beef Duo, Braised Shin, Cottage Pie, Lancashire Mushrooms, Broad Beans, Wild Garlic Potatoes, Baby Carrots, in addition to Mousse of Granny Smiths, Conference Pear Shot Glass, Vanilla Pear Puree to finish. All of which were accompanied by a suitably selected wine list.
 
Darren added: “As an independent catering firm, it gives us a great sense of pride to have been chosen as the official caterers for such a high profile event. We’ve worked with a number of prestigious clients in the past and have even catered for royalty. In doing so this has equipped us with the knowledge and expertise needed when it comes to ensuring fine dining.
 
“The aim was to ensure that our menu choice was both enjoyable and perfectly complement the overall tone of the evening.”
